(4-5 servings)
1 block silken Tofu (1 pound)
1-1/2 Bananas
½ C Orange Juice
¼ tsp Vanilla
2 Tbsp Brown Sugar
½ tsp salt
Blend all ingredients together and serve.
Almost any fruit such as berries, peaches, or mangoes can be
substitutes for the bananas. The sugar may also be omitted.
The nature of tofu is such that it takes on the flavors of what
it is mixed with, somewhat like mashed potatoes. Be creative!
Health Benefits of Tofu
Tofu is a soybean derivative. As such it is
high in protein (8 grams per 100 gram serving), low in saturated
fats, and has no cholesterol. Substituting even part of a meat
eating diet with soy protein has shown to significantly reduce
the risk of heart disease and stroke because it lowers blood
cholesterol and tryglycerides. Other health benefits include:
regulating blood sugar, lowering risk of cancer, preventing
and dissolving gallstones, relieving and preventing constipation,
and replacing estrogen.
Because the soybean is sprayed heavily with
pesticides it is well worth investing in organic soy products.
