Hijiki Tofu Salad

Hijiki Tofu Salad

1 lb tofu
1/3 cup dry hijiki
1 medium carrot (cut in match stick size)
1 tsp sesame oil
3-4 Tbsp miso
1/4 cup sesame seeds

Wash hijiki and soak 10 minutes. Strain water and reserve.
Roast and grind sesame seeds. Saute carrots in 1 tsp oil. When slightly soft add hijiki and saute 5-7 minutes. Add reserved water just to cover vegetables, cover with lid and simmer on low for 30 minutes or until tender. Strain and set aside to cool.

Meanwhile, boil 4 cups water and add tofu. Return to boil then strain out water. Squeeze excess water out of tofu and mash with sesame seeds. Add miso. Add cooled mix to this. Mix well and serve cold.
